Items:
For the salad
2 whole eggs
50 g bread crumbs
4 tsp parmesan cheese, Grated
2 tsp pepper
2 tsp garlic
1 tsp basil, fresh
2 tsp paprika powder
100 g green zucchini
3 tsp salt
For the tomato sauce
3 tbsp tomatoes, diced
1tsp chili flakes
2 tsp olive oil
1 tsp garlic flakes
Salt as per taste
½ tsp pepper
Method:
For the salad
1. Pre-heat the oven to 475°C for 10 minutes.
2. Beat the eggs with some water in a bowl and set aside.
3. Mix breadcrumbs, parmesan cheese and set aside.
4. Adjust the garlic, basil, paprika powder and seasoning in a shallow dish and preserve the zucchini for 10 minutes.
5. Now immerse the zucchini into the egg mixture, then dip throughout the bread crumbs mixture and place it in an oven at 240°C.
6. Cook in the oven each side just about for 5-10 minutes or until brown and crisp. Serve it with tangy tomato sauce.

For the tomato sauce:
1. Combine all the ingredients. Toss and serve.
